Marshallberg Farm is the largest producer of Russian Sturgeon Osetra Caviar in North America and is located right here on the Crystal Coast. Now critically endangered in the wild, farming Russian sturgeon is the only way to harvest caviar legally. Marshallberg farm was started in 2011 when a batch of fertilized sturgeon eggs from the Caspian Sea were imported to the Crystal Coast. The nearly 10-year process from egg to harvesting the caviar was successful and rewarding for the family business. Now connoisseurs of the international delicacy can enjoy the caviar at Crystal Coast restaurants like Prime Bistro.
